Today, I am sharing an easy step-by-step Hyderabadi Mutton Biryani Recipe with pictures so you can recreate this delicious restaurant-style biryani at home.

Ingredients

For Marination (Mutton Layer)

  • Mutton – 1 kg (with bone pieces, medium cut)
  • Yogurt/Curd – 1 cup (thick, whisked)
  • Ginger-Garlic Paste – 3 tbsp
  • Green Chilies – 4 (slit)
  • Red Chili Powder – 2 tsp
  • Turmeric Powder – ½ tsp
  • Coriander Powder – 1 tsp
  • Garam Masala Powder – 1 tsp
  • Fresh Mint Leaves – ½ cup (chopped)
  • Fresh Coriander Leaves – ½ cup (chopped)
  • Lemon Juice – 2 tbsp
  • Fried Onions (Birista) – 1 cup
  • Salt – as needed

For Rice

  • Basmati Rice – 4 cups (soaked for 30 mins)
  • Water – 8 to 10 cups
  • Whole Spices – 3 bay leaves, 6 green cardamoms, 4 cloves, 2 cinnamon sticks, 1 star anise, 1 black cardamom
  • Salt – 2 tbsp

For Assembling Biryani

  • Ghee – 4 tbsp
  • Saffron – a pinch (soaked in 3 tbsp warm milk)
  • Fried Onions – ½ cup (extra for garnish)
  • Mint & Coriander Leaves – few for garnish

Step-by-Step Method

Step 1: Marinate the Mutton

  1. Wash and clean the mutton pieces.
  2. In a large bowl, add curd, ginger-garlic paste, chili powder, turmeric, garam masala, mint, coriander, lemon juice, salt, and fried onions.
  3. Mix well and coat the mutton evenly.
  4. Cover and marinate for at least 3 hours (overnight for best results).

Step 2: Prepare the Rice

  1. Boil 8–10 cups of water in a large pot.
  2. Add salt and whole spices.
  3. Add the soaked basmati rice and cook until 70% cooked (grains should be firm, not fully soft).
  4. Drain the water and spread rice on a plate to cool.

Step 3: Layering the Biryani

  1. In a heavy-bottomed biryani pot or handi, spread the marinated mutton at the base.
  2. Add a layer of cooked rice on top.
  3. Drizzle saffron milk, ghee, and sprinkle fried onions, mint, and coriander.
  4. Repeat layers until all mutton and rice are used up. Finish with rice on top.

Step 4: Dum Cooking (Sealing & Slow Cooking)

  1. Cover the pot with a tight-fitting lid. Seal the edges with wheat dough (optional but authentic).
  2. Cook on high flame for 10 minutes and then on low flame for 30–35 minutes.
  3. Let it rest for 10 minutes before opening.

Step 5: Serve

  1. Gently fluff the biryani with a flat spoon.
  2. Serve hot with raita, mirchi ka salan, or salad.

  • Always use long-grain basmati rice for best results.
  • Marinate mutton overnight for soft and juicy pieces.
  • Do not overcook the rice; it should be 70% cooked only.
